Ugly Butterfly, overlooking the dunes and rolling waves of Fistral Beach, is firmly in the second category. Forever.

It’s easy to assume restaurants like this are all about the food, but that would miss what makes any time here so memorable. Long before the first course arrives, you’re welcomed into a dining room where Cornwall quietly steals the show. The changing light over the coastline, the gentle conversation around the room and the unhurried pace immediately remind you that this is somewhere to savour, not simply somewhere to eat.

What makes the story even more remarkable is how this restaurant arrived here.

After leaving its previous home at Carbis Bay, Ugly Butterfly began a new chapter at The Headland. Rather than simply recreating what came before, Adam Handling and his team embraced the opportunity to build something even stronger. The move has given the restaurant a spectacular new setting overlooking Fistral Beach, while allowing the original philosophy to evolve without losing its identity.  

That journey makes what happened next even more special.

Just months after opening its doors in Newquay, Ugly Butterfly was awarded its first Michelin Star, becoming Newquay’s first Michelin-starred restaurant. It’s an extraordinary achievement, but after spending an evening here, it also feels entirely deserved.  

The tasting menu is exceptional.

In fact, everything is exceptional.

Every course feels beautifully balanced, celebrating the remarkable produce of the South West without ever becoming overcomplicated. Each plate arrives with purpose, every ingredient has earned its place, and every course somehow leaves you even more excited for the next.

Then come the wines. Oh the wines!

There’s something wonderfully reassuring about placing your trust in a knowledgeable sommelier, and here that trust is rewarded time and time again. Every pairing felt considered rather than predictable, introducing wines that elevated each course in ways we simply wouldn’t have discovered ourselves. It doesn’t help that I have also made friends with Adam, Nick, Toby and Steph. Who are terrible influences when it comes to wine. and food. Oh, and desert. Champagne anyone?

And then there was one very welcome surprise.

Seeing Krug on the wine list immediately caught my eye. It’s one of my favourite Champagnes, and discovering it here somehow summed up the entire evening. Nothing felt compromised. Every choice, from the food to the cellar, reflected genuine quality rather than simply chasing prestige.

One other thing, that always appeal to me is the glass you are served your wine in. Specifically the same glasses I have at home, Nude Stem Zero. They are beautiful and part of the experience. Everything gleams with cleanliness and precision whilst also shouting “drink me, enjoy me.”

But the reason I’ll keep returning isn’t just the cooking.

It’s the people.

Adam, Nick, Toby and Steph to name a few, perfectly embody what great hospitality should feel like. Warm, knowledgeable and genuinely passionate about creating an unforgettable evening. They never simply served dinner, they guided through the experience. Every recommendation felt personal, every conversation natural, and together with the rest of the team they created something increasingly rare in hospitality: service that feels effortless while being executed flawlessly. They have become friends of mine but that doesn’t change the experience they give. Everybody receives that at Adam Handling restaurants.

That’s something Roaming Whispers has always believed.

The finest hotels and restaurants are never defined by beautiful buildings or talented chefs alone.

They’re remembered because of the people who make you feel welcome.

That’s not say its not a beautiful building as its stunning and the Hotel at the side is steeped in history as well, with the most phenomenal views.

As the evening drew to a close and the last drops of Krug disappeared from the glasses, we all realised we’d been sitting there for hours without once looking at the time.

For me, that’s always the sign of somewhere truly special.
